What’s for Supper? 03.15.21

03.15.21 ~ What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  I missed last week’s post, due to being indisposed.  That’s a polite expression for the misery, but I lived through it.  I said the older I get the longer it takes to recover from terrible things like a stomach bug.  But you are definitely not here to hear about that.  In the meantime, we are enjoying spring like weather.  We will discuss the fact that we will have freezing rain later this week, and we’ll enjoy the Spring while we have it!  Right? Right.

Here’s what we ate last week:

Over the past two weeks I managed to take seven photos of the food that was eaten at our house.  Here is what they were:

Burgers.  Burgers with chips and pickles is always a go to when I need something easy.

Alfredo with a giant salad  and garlic bread.  I used frozen pappardelle pasta.  Everyone but me liked it a lot.  It may have been because I had been sick, so I’ll definitely try it again.

Chili with grits and raw onions.  Comfort food at its finest. Our favorite quick Italian pizza place opened back up.  Yay!  It was excellent.

Walmarts version of Lasagna with a giant salad and my bread.  Its just okay in my opinion. I would much rather have my “fast” version.

Soup beans with salmon, Mac and cheese, and roasted veggies.

McDonalds.  What can I say about that?  It was fine.

Taco salad with chips and salsa.

Roast with everything, corn muffins and coleslaw.  Yum.

Groceries

Since I missed last weeks post, I decided to just list everything below that I spent the first two weeks of March on groceries.

03/13 – Walmart $100.05

03/13 – Food Lion $41.31

03/05 – Walmart $105.67

I didn’t even try to cull out all of the non food items.  In the perfect world where I live inside my head, sometimes I do this and keep everything straight.  But reality is that I don’t live in a perfect world, so all of the shampoo, face wash, toilet paper and cat litter get lumped in with milk, bread and everything in between.

Are you better at this than I am?

I keep up with this through my Fetch app.  I just cashed my money out and I’m buying myself an ice machine that supposedly makes ice like you get from Sonic.  I can’t wait to see if it actually does.  I’ll let you know!  If you don’t already have Fetch, you can use my link below and automatically get at least 2,000 points added to your account.  Woohoo!

March ~ so far:  $247.03

February $547.53

January:  $485.88

03.01.21 What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  I am totally behind, but valiantly trying to get back on track.  We shall see.  Are you seeing hints of Spring where you are?  We woke up to a shivery 28* this morning, but are looking at steadily increasing temperatures for the next little bit.  Now that I’ve updated you with our weather, lets get to the food.

Here’s what we ate last week:

03.01.21

Baked chicken with a giant salad, baked potatoes and buttered bread.03.01.21Soup beans, salmon, roasted veggies and Mac and cheese.  My comfort food.03.01.21

Baked ravioli with a giant salad and garlic bread.  YUM.03.01.21

Chicken fajitas with chips and salsa.  These were delicious.  03.01.21

Hot dogs without chili (again) with a variety of chips and broccoli salad.  I had another craving.

03.01.21Hamburgers with onion rings and French fries from a local place in town that opened up recently.  They were just okay.  I don’t say that lightly.  But when EVERYONE’S food is just okay, it’s just okay.03.01.21

Liv and I did the grocery shopping on Saturday, so Sunday dinner changed when I found ribeyes on the clearance rack.  They were divine, with a giant salad, baked potatoes, and garlic bread.

Groceries:  I needed to run into our local Food Lion to find chicken nuggets (hopefully) and came out on Wednesday with a total of $54.93.  On Saturday Liv and I drove to the next town over to stock up on things that our Kroger had on loss leader and walked out of there with a grand total of $173.71.  I had a list and everything!  One of the things that went into the cart was the ribeyes, but I’ve already gotten two meals out of those, so my brain is already telling me that they were justified.  And delicious.

Grand total for the month of February:  $547.53

February 28:  $228.64

February 20:  $88.93

February 13:  $127.09

What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  We had snow for the third week in a row.  You already know what I’m waiting for.  However pretty it is, and it does melt quickly, I’m still just over here waiting to plant my tomatoes….

Here’s what we ate last week:

Thick cut pork chops with baked potatoes and buttered bread.  There was a salad to go with this, but I somehow missed it when I took the photo.

Baked “Lasagna” with garlic bread and giant salad.

Hot dogs without chili, perfect boiled eggs and chips.

Potato soup, oven bacon and biscuits.  YUM.

Takeout.  But I did make my own green beans!

It was a “whatever you can find” night.  I had hot dogs without chili again. Sometimes you just want something and you have it.  Delicious.

What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  It snowed again this past Saturday night.  While it’s beautiful, I am so ready for Spring.  As always.

Here’s what we ate last week in no particular order:

I made pulled chicken on buns with chips and air fryer pickles.  We have a tavern in our area that makes these pickles deep fried and we love them.  These turned out really good, but I need to tweak the recipe before I share it with you.  Why yes, those are my Christmas dishes.  What do you use to eat on when you don’t run the dishwasher that morning? 😯

Pancakes with bacon and hash browns.  Liv asked me why I do this to my pancakes.  No, it’s not very appealing to look at, but I can get a better coverage with my syrup this way with less, which doesn’t make me wish I hadn’t made pancakes for supper.  They were pretty good, but I won’t be using this recipe I found online again.

Soup beans with salmon, Mac and cheese, roasted onions and potatoes with fry sauce.  Yum.

Taco salad with a cheese and refried beans and onions rollup.  Delicious.

Roast chicken quarters with baked potatoes and roasted carrots and onions.  We had sweet Hawaiian rolls on the side.

It was a canned soup and grilled cheese night.  Everyone seemed to be content.  I also got Hayden to try my beloved Vegetable Beef which he has now asked for more than once for lunch, so I count that as a win.

Tuna sandwiches with chips and cucumbers.

That’s it for us.  I hope that you ate something delicious this past week.  If you did, let me know in the comments down below.  I am always looking for a tried and true recipe to spring on my family.

What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  I completely missed last week.  I am sorry about that.  Every time that I think I’ve found my rhythm this year, I have to start from scratch and find a new one.  One thing that I’ve learned about myself after all of these years on earth is that I’m getting better at it.  Or at least today that’s my feeling.  Ask me if I feel the same later this week, when I’m sure something will be off kilter and I’ll need to realign myself.  Again.  Let’s go!

Here’s what we ate in the last two weeks in no particular order:

Chicken and yellow rice with cornbread muffins and coleslaw.  I’ll try to post this super simple and yummy recipe tomorrow.

BLT sandwiches with chips and fresh tomatoes and cucumbers.  Yum.

Hamburgers with chips and fresh tomatoes and onions.

Kielbasa with rice, fresh cucumbers and garlic bread.

Chinese!  It was my birthday and I got to choose, so this was it.  It was delicious too.

Homemade meatballs with spaghetti and buttered bread.  The meatballs were just okay in my opinion.  Firstly, I’m not a great meatball lover, so I’m already inclined to dislike them. Do you have a tried and true meatball recipe?  I would to have it!

Chicken and dumplings with cornbread muffins.  This looks pretty terrible, but it tasted amazing.  I got the recipe from my brother.  When I make them again, I’ll take photos so I can share it with you.

Soup beans, salmon, Mac and cheese with roasted potatoes, onions and broccoli.

Burgers with Doritos, fresh onions, tomatoes and cucumbers.

When I spent my morning getting groceries Denton ASKED for Chinese food again.  We tried something new last time.  It was their steamed chicken dumplings, and he feel instantly in love with them.  So I got Chinese twice in two weeks.  Yay for me.  And the dumplings were amazing, again.  Also we have a new favorite to share, their black peppered chicken.  YUM.

That’s it for us.  I hope that you ate something delicious this past week.  If you did, let me know in the comments down below.  I am always looking for a tried and true recipe to spring on my family.

Fast and Easy Doughnuts

Fast and easy doughnuts

How cold is it at your house today?  It’s an unbelievable 5* this morning at my house.  The perfect morning to make fast and easy doughnuts.  You’ll be so, so glad you did!

The first thing to remember about this recipe is to use cheap canned biscuits.

Pop them out of the can – try not have a heart attack waiting for the pop – and cut them into four pieces.

Deep fry them in hot oil until they are golden brown and drain on paper towels.

While they are frying, pour about 1/2 cup of sugar in to a gallon sized ziplock baggie and add 1/2 teaspoon of cinnamon.

Close it up and shake it until it’s combined.

After you drain the doughnuts, while they are still warm, drop them into the sugar/cinnamon mixture and shake until they are covered.  Fast and Easy Doughnuts

Then try not to eat them all before your family figures out what you’ve created!

One thing to note about these doughnuts is that they are absolutely divine – when they are warm and just made.  But, they do not keep well.  So, just keep in mind that you’ll have to eat them all when you make them.  It won’t be hard, I promise.

Here’s the handy dandy printable recipe.

Fast and Easy Doughnuts

  • Canned biscuits the cheap kind is best!!
  • Hot oil for deep frying
  • Sugar
  • Cinnamon

  • Deep fry in hot oil until golden brown.
  • Drain on paper towels.
  • Mix sugar and cinnamon in a gallon sized ziplock baggie.

Christmas Candy :AKA: Old Fashioned Icebox Fruitcake

This is a recipe that’s from Denton’s family.  Denton’s Mama makes it every Christmas that they get to spend with us.  She got my Daddy hooked on the stuff when she made it for him one year.  So this year when we had Christmas at Thanksgiving, lol, I made him and my Mama a giant batch to last them through the winter.  Maybe.

I LOVE this stuff.  I hesitated to even put the word FRUITCAKE in the title of this post because – 1. I HATE fruitcake.  I’m sorry if you love it!  B.  This has nothing, NOTHING to do with traditional fruitcake in my opinion.  Sorry for all of the shouting in this paragraph.  I feel VERY STRONGLY about fruitcake, obviously.

Let’s get on with the recipe and you’ll see what I mean.

Gather your ingredients.  You need:

A whole box of vanilla wafers.  My MIL always, ALWAYS uses the Nilla brand.  Now, you know me, unless it’s on sale and I have a coupon for this specific brand…..I used the brand from Aldi.  Shhh, don’t tell Denton’s Mama.

Candied Cherries…..

Yum!

Candied Pineapple.

Double yum.

I absolutely could not find any candied pineapple this year until we got home and I found ONE.  So in the recipe for my parents, I substituted the tropical dreams Pineapple from Sun*Maid.  My parents still loved it, but if you can find the candied pineapple use it.

Raisins.  Denton’s Mama always uses golden raisins, but I had these, so……. and chopped pecans, which I somehow didn’t a photo of.

Nectar of the universe……it goes with everything, right?

Crush your vanilla wafers.  You can make them very, very fine or leave chunks of cookies.  Both ways are excellent!  Then, start adding the other ingredients.  Chop the pineapple pretty fine……

The raisins too……

Chop the candied cherries fine and add them.  Pour in the sweetened condensed milk and pecans…..

Stir, stir and stir.

Press into buttered dishes.

Try not to just scoop it out and eat it by the spoonful at this point!  Refrigerate for at least a couple of hours, then cut into bite size pieces.  This stuff is heaven.  But, it’s very, very rich, so you’ll definitely want to cut it into 1 X 1 pieces.  And then try not to eat forty of them.  Good luck with that!

Here’s the handy dandy printable.

Christmas Candy :AKA: Old Fashioned Icebox Fruitcake

Ingredients

  • 1 box of vanilla wafers
  • 1 can of sweetened condensed milk
  • 1 8 ounce container of candied cherries
  • 1 8 ounce container of candied pineapple
  • 4 ounces of raisins
  • 1 cup of finely chopped pecans

Instructions

  • Crush the vanilla wafers until fine.
  • Chop the cherries, pineapples, raisins and pecans until fine.
  • Add all the ingredients together and stir until very well combined.
  • Scoop into a very well buttered dish and refrigerate until set (at least a couple of hours).
  • Cut into 1 X 1 pieces and enjoy!
  • Note: This stuff freezes fantastically!!!
